The 5 layers of Samosa Chaat

Samosa Chaat is built from 5 parts. They are listed in the order you meet them, and the numbers match the diagram.

  1. The crushed samosa

A hot, crisp samosa broken into pieces and spread across the plate, so the potato filling and the pastry are both exposed.

  2. Chickpeas or chole

Often a spoonful of spiced chickpea curry ladled over the samosa, adding a savoury, earthy layer.

  3. Sweet and tangy chutneys

Dark tamarind chutney for sweetness and green mint chutney for sharpness, drizzled over the top.

  4. Whisked yogurt

Cold, lightly sweetened yogurt that cools the heat and ties the layers together.

  5. The toppings

Chopped onion, coriander, sev and a dusting of chaat masala for crunch, freshness and sour spice.

01

What it is made of

Samosa chaat takes something already good, a samosa, and turns it into a plate with more contrast. Everything but the base is cold or fresh, which is what makes it a chaat and not just a snack.

  • Samosa
  • Chickpeas
  • Tamarind chutney
  • Mint chutney
  • Yogurt
  • Onion and coriander
  • Sev and chaat masala

02

How the layers work together

The first bite is soft and creamy from the yogurt, then crisp as the samosa pieces break. Tamarind adds sweetness, mint adds heat, onion adds crunch and the chaat masala gives a sour, savoury finish. Each spoonful is a little different.

03

Where it comes from

Chaat is a broad family of Indian street snacks associated with North India. Samosa chaat is one of its best-known forms, and the idea of crushing a fried snack and dressing it with yogurt and chutney is shared across many chaats.

04

Variations and other names

You may see it with different bases and toppings:

  • Samosa ragda: served with a white pea curry, popular in Mumbai.
  • Samosa chole chaat: with a Punjabi-style chickpea curry.
  • Kachori chaat: made with a kachori instead of a samosa.
  • Aloo tikki chaat: built on a potato patty.

05

How to eat it

Use a spoon and take every layer in one scoop. Eat it right away, because the yogurt softens the samosa quickly. A cup of chai or a cold drink on the side is the usual choice.
