What you need

Quantities serve 2. Ready-made or freshly fried samosas both work. The chutneys can be store-bought.

  • 2 hot samosas
  • 1/2 cup cooked chickpeas, warmed with a pinch of cumin and salt
  • 1/2 cup plain yogurt, whisked with 1 tsp sugar and a pinch of salt
  • 2 tbsp tamarind chutney
  • 2 tbsp green chutney
  • 2 tbsp finely chopped red onion
  • 1 tbsp chopped coriander
  • 2 tbsp fine sev
  • 1/2 tsp chaat masala, plus a pinch of chilli powder

Step by step

Serve it straight after assembly. The layers are best when the samosa is still hot.

  1. Warm the samosas

Heat the samosas in a 190 C (375 F) oven for 8 to 10 minutes until hot and crisp.

  2. Prepare the toppings

Whisk the yogurt with the sugar and salt until smooth. Chop the onion and coriander, and have the chutneys ready in small bowls.

  3. Crush the samosas

Break each samosa into a few large pieces on a plate. Press gently, so the filling is exposed.

  4. Add the chickpeas and yogurt

Spoon the warm chickpeas over the samosa, then pour the yogurt over the top.

  5. Drizzle and finish

Add both chutneys, scatter the onion, coriander and sev, and finish with chaat masala and chilli powder. Eat at once.

Tips for a better result

Contrast is the point, so keep the temperatures different.

  • Keep the samosa hot and the yogurt cold. That contrast makes the dish.
  • Whisk the yogurt until it is completely smooth, so it pours.
  • Add sev last for crunch, just before eating.

02

Mistakes to avoid

Watch out for:

  • Using soft, microwaved samosas, which turn mushy under the yogurt.
  • Too much yogurt, which drowns the other flavours.
  • Assembling in advance, which makes the base go soft.

Shopping for it in Canada

Everything can come from one Indian grocery run, with a few supermarket stand-ins.

  • Samosas: frozen samosas from Indian grocers work well and reheat crisp in the oven.
  • Chutneys: jars of tamarind and mint-coriander chutney are widely sold.
  • Sev: sold in packets at Indian grocers. Crushed plain potato chips are a rough substitute.
  • Chaat masala: from Indian grocers. It is a tangy spice mix worth having.
