The 5 layers of Mango Lassi

Mango Lassi is built from 5 parts. They are listed in the order you meet them, and the numbers match the diagram.

  1. The yogurt

Thick, plain yogurt that gives the drink its creamy body and gentle tang.

  2. The mango

Ripe mango pulp, usually canned Alphonso or Kesar, or fresh mango, for sweetness and colour.

  3. The sweetener

A little sugar or honey, only if the mango is not sweet enough.

  4. The liquid

A splash of cold milk or water to loosen the mixture to a drinkable thickness.

  5. The flavour

A pinch of cardamom, and sometimes crushed ice, for fragrance and chill.

01

What it is made of

Mango lassi has only a few ingredients, so the quality of the yogurt and the mango matters. Thick yogurt makes a creamy drink, and sweet mango pulp makes it taste like fruit.

  • Plain yogurt
  • Mango pulp
  • Milk or water
  • Sugar or honey
  • Cardamom
  • Ice

02

How the layers work together

Sweet, creamy and tangy, with the strong fragrance of ripe mango. The yogurt balances the sweetness, so it tastes refreshing rather than heavy, and it cools the palate after spicy food.

03

Where it comes from

Lassi is a yogurt drink from Punjab, and the fruit version, especially mango, became popular in Indian restaurants around the world. Many Canadians first try it in an Indian restaurant.

04

Variations and other names

Lassi comes in several styles:

  • Sweet lassi: sugar and a little cardamom, no fruit.
  • Salted lassi: yogurt with salt and roasted cumin.
  • Rose lassi: flavoured with rose syrup.
  • Banana or strawberry lassi: other fruit versions.

05

How to eat it

Drink it cold, slowly, with a straw. It works well alongside spicy dishes, because the dairy calms the heat.
