What you need

Quantities serve 2. Canned mango pulp gives the most reliable flavour.

  • 1 cup thick plain yogurt
  • 1 cup mango pulp (canned) or 1 large ripe mango, peeled and chopped
  • 1/2 cup cold milk or water
  • 1 to 2 tbsp sugar or honey, to taste
  • 1/4 tsp ground cardamom
  • A handful of ice cubes

Step by step

Everything goes into the blender at once.

  1. Combine

Add the yogurt, mango pulp, milk, sugar and cardamom to a blender.

  2. Blend

Blend for 30 to 40 seconds, until completely smooth.

  3. Taste

Taste and adjust. Add more sugar if the mango is tart, or more milk if it is too thick.

  4. Chill

Add the ice and blend briefly, or pour over ice in glasses.

  5. Serve

Serve cold, with a pinch of cardamom on top.

Tips for a better result

Quality ingredients matter here.

  • Use thick, full-fat yogurt. Thin yogurt makes a watery lassi.
  • Chill everything before blending for the best texture.
  • Sweeten gradually, since canned pulp is often already sweet.

02

Mistakes to avoid

Common mistakes:

  • Using sweetened flavoured yogurt, which makes it too sweet.
  • Adding too much ice, which dilutes it.
  • Using unripe mango, which tastes sour.

03

Shopping for it in Canada

Mango pulp is the key ingredient.

  • Mango pulp: canned Alphonso or Kesar pulp from Indian grocers is the best option.
  • Fresh mango: ripe ones are sold in supermarkets, but quality varies.
  • Frozen mango chunks: a good option out of season.
  • Yogurt: plain, full-fat Balkan-style or Greek yogurt thinned with milk.
