The 5 layers of Cheese Paratha
Cheese Paratha is built from 5 parts. They are listed in the order you meet them, and the numbers match the diagram.
The soft dough
A soft, forgiving whole wheat dough, kept slightly softer than usual so it stays tender around the cheese.
The cheese
Grated mozzarella or a mix of mozzarella and processed cheddar, chosen because it melts smoothly and stretches.
The light seasoning
Black pepper, a pinch of salt, and sometimes dried oregano or chilli flakes. Cheese is already salty, so the seasoning is gentle.
The seal
The dough is pinched shut over the cheese and pressed flat, keeping the cheese from leaking out.
The crisp surface
A short cook on a medium griddle with butter, just long enough to melt the cheese and brown the outside.
01
What it is made of
A cheese paratha is the quickest of the stuffed parathas, because the filling needs no cooking. The skill is in sealing it well and cooking it fast enough that the cheese melts but does not escape.
- Whole wheat dough
- Mozzarella or cheddar
- Black pepper
- Chilli flakes or oregano
- Butter
02
How the layers work together
Buttery and mild, with a gooey, stretchy middle and a toasted wheat flavour. It is a gentle, familiar taste, closer to a grilled cheese sandwich than to a spicy Indian dish, which is why many children ask for it.
03
Where it comes from
Cheese parathas are a modern, cafe-style variation on the traditional stuffed paratha. Cheese is not a classic paratha filling in North India, but the idea has become popular in Indian cafes and homes, especially for children.
04
Variations and other names
People add their own twists:
- Cheese and corn paratha: with sweetcorn in the filling.
- Chilli cheese paratha: with green chilli added.
- Pizza paratha: with pizza sauce and herbs.
- Cheese and onion paratha: with finely chopped onion.
05
How to eat it
Eat it while the cheese is still molten. Tomato ketchup is a common partner with children, and green chutney or yogurt suit adults.
