What you need
Quantities serve 4 (4 parathas). Use a cheese that melts well. Pre-grated mozzarella is ideal.
- 2 cups whole wheat flour, 1/2 tsp salt, 1 tbsp oil, about 3/4 cup water
- 1 1/2 cups grated mozzarella (or a mix of mozzarella and cheddar)
- 1/2 tsp black pepper
- 1/2 tsp chilli flakes or dried oregano
- Butter for cooking
- Ketchup or chutney, to serve
Step by step
Work quickly once the cheese is out, since warm cheese gets sticky.
Prepare a soft dough
Knead the flour, salt, oil and water into a dough a little softer than for a roti. Rest it for 15 minutes.
Season the cheese
Toss the grated cheese with the pepper and chilli flakes in a bowl. Keep it in the fridge until you are ready to stuff.
Shape the dough
Divide the dough into 4 balls and roll each into a 10 cm round with slightly thicker edges.
Stuff and seal
Place a heaped handful of cheese in the middle. Fold the edges up, pinch closed and flatten gently into a disc.
Roll lightly
Dust with flour and roll to about 15 cm. A gentle touch matters here: pressing hard pushes the cheese through.
Cook
Cook on a medium griddle for a minute on each side, add butter, and press lightly until the cheese melts and the surface is golden. Serve straight away.

Tips for a better result
The cheese is the thing that can go wrong.
- Keep the cheese cold, so it stays firm while you seal the dough.
- Medium heat only. High heat browns the dough before the cheese melts.
- Cut it into wedges while hot for the stretchiest cheese pull.
02
Mistakes to avoid
Common problems:
- Using too much cheese, which leaks through the seam.
- Rolling too thin, which tears over the cheese.
- Cooking on high heat, which leaves cold cheese in the middle.
03
Shopping for it in Canada
This is a very easy one to shop for.
- Cheese: pre-grated mozzarella, or a pizza blend, from any supermarket.
- Flour: whole wheat or half whole wheat and half all-purpose for a softer paratha.
- Butter: salted works well.
- Ketchup: for the kids, and for the nostalgic.

Questions, answered.
How long does Cheese Paratha take to make?
About 30 minutes from start to finish for 4 (4 parathas).
Can I make Cheese Paratha ahead of time?
You can make the dough a day ahead and stuff and cook to order. Cooked parathas harden as they cool.
Which cheese is best for a cheese paratha?
Low-moisture mozzarella melts smoothly and stretches. A little cheddar adds flavour, and paneer works if you want a firmer filling.
What do I serve with Cheese Paratha?
Ketchup, a green chutney, or yogurt, and a cold lassi.
