What “hakka” means here
The Hakka are a Chinese community, and hakka cooking travelled to India with them, especially to Kolkata. In India the phrase “hakka noodles” now refers to the stir-fried noodles served in Indo-Chinese restaurants and street carts, which differ from the dishes of the same name in China.

How they are made
Noodles are boiled and cooled, then tossed in a very hot wok with oil, garlic, thinly sliced cabbage, carrot, capsicum and spring onion. Soy sauce, vinegar and chilli sauce are added at the end, and the noodles are cooked briefly so they stay springy.

What they taste like
Savoury, a little smoky from the wok, tangy from the vinegar and warm from chilli. They are not overly spicy, but the garlic gives them a distinctive Indian street flavour.

What goes with them
Hakka noodles are often paired with Veg Manchurian, a fried vegetable dish in a soy-garlic gravy, and the two are so often ordered together that they are a classic combination across India. Spring rolls and momos are common starters.
