01

Chaat: the heart of it

Chaat is a family of snacks built from something crisp or starchy, then dressed with yogurt, chutneys, spices and crunchy toppings. Pani puri, dahi puri, samosa chaat and aloo tikki chaat are all chaat. The point is a burst of every flavour in one bite.

02

Fried and filled

Samosas, kachoris and spring rolls are the fried pastries: crisp shells around a spiced filling. They are the snacks you find stacked hot behind the glass at tea stalls and sweet shops.

03

Bun and bread snacks

Vada pav, dabeli, bun maska and pav bhaji all rely on the soft Indian bread roll called pav. Mumbai is the capital of this family, where a potato fritter in a bun is considered the city’s favourite fast food.

04

Griddle and roll

Parathas, frankies and toasted sandwiches are made on a flat griddle. A paratha is a stuffed flatbread served with butter, a frankie is a roll with a spiced filling, and a Bombay sandwich is grilled until crisp and loaded with chutneys.

05

Indo-Chinese

Noodles, Manchurian and momos have been adopted so completely that they are now a street food category of their own: Chinese-influenced cooking with Indian spices, sauces and heat.
