01
A vegetarian tradition
India has a long vegetarian tradition, and many of its most famous dishes grew from it, particularly in Gujarat, Rajasthan, Punjab and parts of the south. Street food followed: chaat, samosas, vada pav and parathas were all built without meat.
02
Where the flavour comes from
With no meat to lean on, the cooking relies on layers: a spiced base, a tangy chutney, a cooling yogurt, a crunchy topping and a final dusting of spice. Each contributes a different texture and taste, and together they make something more complex than the sum of the parts.
03
Dairy and vegetarian are not the same as vegan
Many dishes use yogurt, butter, ghee, paneer or cheese, so they are vegetarian but not necessarily vegan. If you have specific dietary needs, tell the staff before you order and ask about the particular dish.
04
Great vegetarian dishes to try
A starter list for any vegetarian table:
- Samosa chaat, for crunch, yogurt and chutney.
- Pav bhaji, for a rich, buttery vegetable curry.
- Aloo paratha, for a hearty stuffed flatbread.
- Vada pav, for a quick, spicy snack.
- Hakka noodles, for Indo-Chinese comfort.
