Indian street food

Samosa chaat vs aloo tikki chaat.

The toppings are the same. The difference is what is underneath: a crushed samosa with a flaky shell, or a crisp potato patty with a soft centre.

01

The base

Samosa chaat uses a fried pastry filled with spiced potato and peas, broken into pieces. The pastry gives crunch, and the filling falls apart into the toppings. Aloo tikki chaat uses a flat patty of seasoned mashed potato, pan-fried until crisp outside. It is softer and more uniform.

02

The toppings

Both are dressed with whisked yogurt, tamarind chutney, green chutney, chopped onion, sev and chaat masala. Sometimes a spoonful of chickpeas is added. They taste similar at first and then diverge as you eat the base.

03

Texture

Samosa chaat has more crunch and more variety, with flaky pastry and soft filling in the same bite. Aloo tikki chaat is more consistent, with a golden crust that gives way to a smooth, spiced potato centre.

04

Which to order

If you want crunch and are new to chaat, order samosa chaat. If you like potato and want something softer and more comforting, order aloo tikki chaat. At the same price, many people share one of each.
