Indian street food

Rajasthani snacks, explained.

Rajasthan’s food is made to last in a dry climate: fried snacks, gram flour, spices and ghee. Kachoris and mirchi vada are its best-known street foods.

01

Kachori

The pyaaz kachori of Jodhpur and Jaipur is a round, flaky pastry stuffed with spiced onion. Moong dal kachori and mawa kachori are other versions.

02

Mirchi vada

Large green chillies stuffed with a potato filling, dipped in gram flour batter and fried. It is a famous Jodhpur snack, eaten with chutney.

03

Dal baati churma

Baked wheat balls served with lentils and a sweet crumbled wheat dish. It is Rajasthan’s signature meal.

04

Namkeen and sweets

Bikaner is known for namkeen, crisp fried snacks, and for sweets such as ghevar and mawa kachori.

05

Cooking for a dry climate

Much of Rajasthan is desert, where fresh vegetables and water are scarce. Cooks relied on ingredients that keep: gram flour, lentils, dried beans and berries, spices and ghee. Dishes such as gatte ki sabzi, gram flour dumplings in a yogurt gravy, come from that need, and fried snacks that stay good for days are a natural result.

The same habits shape its street food, which is rich, dry and highly spiced, and made to be eaten with strong tea.
