The 5 layers of Pyaaz Kachori

Pyaaz Kachori is built from 5 parts. They are listed in the order you meet them, and the numbers match the diagram.

  1. The flaky shell

A dough of refined flour and oil, rubbed until crumbly so it blisters and flakes into thin layers when fried.

  2. The onion filling

Finely chopped onion cooked with fennel, coriander, cumin, chilli and a little gram flour, which binds the mixture.

  3. The seal

The dough is wrapped around the filling and pinched shut, then rolled flat so the filling is spread evenly.

  4. The slow fry

Frying on a low heat lets the shell puff, set and crisp from the inside out.

  5. The chutneys

Green chutney for heat and sweet tamarind chutney for balance, served alongside.

01

What it is made of

A kachori is a stuffed, deep-fried pastry. The shell must be rich enough to flake, and the filling must be dry, because wet filling breaks the shell.

  • Refined flour
  • Onion
  • Fennel seeds
  • Coriander and cumin
  • Gram flour
  • Green chilli
  • Oil for frying

02

How the layers work together

The shell is flaky and crumbly, almost like a pie crust. Inside, the onion is sweet from cooking, fragrant with fennel and warm from chilli. It is more savoury and layered than a samosa.

03

Where it comes from

Pyaaz kachori is closely associated with Rajasthan, particularly the cities of Jodhpur and Jaipur, where it is a classic snack sold fresh from large pans. Kachoris are eaten widely across India with many different fillings.

04

Variations and other names

The kachori family is wide:

  • Moong dal kachori: filled with spiced lentils, common in Rajasthan.
  • Khasta kachori: a flakier, crumbly version.
  • Kachori chaat: crushed and topped with yogurt and chutneys.
  • Hing kachori: with asafoetida in the filling.

05

How to eat it

Eat it hot, broken open so steam escapes. Dip it in green or tamarind chutney. A strong chai on the side balances the richness.
