01
The same shell, different fillings
Both start with a small, hollow, crisp puri. Pani puri adds a potato filling and then a thin, cold water flavoured with mint, chilli and tamarind. Dahi puri adds a potato and chickpea filling, then whisked sweet yogurt, tamarind and mint chutney and a topping of sev.
02
How they taste
Pani puri is sharp, cold and spicy, with a burst of liquid when you bite. Dahi puri is creamy, sweet and cool, with a gentler heat. If pani puri is a splash of cold water, dahi puri is a spoonful of dessert-like chaat.
03
How you eat them
Both are eaten in one bite, immediately. Pani puri is especially urgent, because the water softens the shell within a minute. Dahi puri holds up slightly longer because yogurt is thicker, but should still be eaten right away.
04
Which to order
If you like heat and tang, order pani puri. If you are sensitive to spice, or ordering for children, order dahi puri. Many people order both and eat them one after the other, to move from sharp to soft.
