The 5 layers of Dahi Puri

Dahi Puri is built from 5 parts. They are listed in the order you meet them, and the numbers match the diagram.

  1. The puri shells

Small, round, hollow puris fried until crisp, with the top cracked open so they can be filled.

  2. The potato and chickpea filling

A spoonful of seasoned mashed potato and boiled chickpeas, which gives the puri a soft centre.

  3. Sweet yogurt

Chilled, whisked, lightly sweetened yogurt spooned generously into each puri.

  4. Tamarind and mint chutneys

Sweet-sour tamarind and fresh green chutney for the sweet and tangy notes.

  5. Sev and spice

Fine fried gram flour noodles and a dusting of chaat masala and roasted cumin on top.

01

What it is made of

Dahi puri is the creamy relative of pani puri. The shells are the same, but instead of spiced water they are filled with yogurt and chutneys, which makes the dish cooler and milder.

  • Puri shells
  • Potato and chickpeas
  • Yogurt
  • Tamarind chutney
  • Mint chutney
  • Sev
  • Chaat masala

02

How the layers work together

A crunch gives way to cold, creamy yogurt, sweet tamarind and fresh mint, with a savoury finish from the spices. It tastes lighter and gentler than pani puri, and the sweetness makes it popular with children.

03

Where it comes from

Dahi puri is closely associated with Mumbai’s street food scene and is a staple of the city’s chaat stalls. It is a variation on the same fried puri used for pani puri and sev puri.

04

Variations and other names

The same shells make several chaats:

  • Sev puri: flat crisp discs topped with potato, chutneys and sev.
  • Bhel puri: puffed rice mixed with chutneys, onions and sev.
  • Dahi papdi chaat: flat papdi crackers topped with yogurt and chutneys.
  • Pani puri: the same shells filled with spiced water.

05

How to eat it

Eat each puri whole in one bite, so the crunch, the cold yogurt and the sweet and sour chutneys all arrive together. Eat them quickly, before the shells soften.
