Spoons and cups
A Canadian teaspoon is 5 mL, a tablespoon is 15 mL and a cup is 250 mL. A katori, the small bowl used in many Indian homes, is roughly 150 to 200 mL, so ask what size the recipe means.
02
Flour and sugar by weight
These are approximate, because packing changes the weight:
- 1 cup all-purpose flour: about 125 g.
- 1 cup whole wheat flour (atta): about 120 g.
- 1 cup besan (gram flour): about 100 to 120 g.
- 1 cup sugar: about 200 g.
- 1 cup plain yogurt: about 245 g.
03
Butter, oil and liquids
A cup of butter is about 227 g, a tablespoon of butter about 14 g and a tablespoon of oil about 14 g. Water and milk are about 240 to 250 g per cup.
04
Temperatures
Useful ones for Indian snacks:
- 150 C = 300 F: slow frying for samosas.
- 170 C = 340 F: frying vada and kachori.
- 175 C = 350 F: frying puris.
- 190 C = 375 F and 200 C = 400 F: oven reheating and baking.
