What you need
Quantities serve 4 (8 samosas). The dough rests while you make the filling, so read all the steps before you start.
- For the dough: 2 cups (250 g) all-purpose flour, 1/2 tsp carom seeds (ajwain), 1/2 tsp salt, 4 tbsp oil or ghee, about 1/2 cup cold water
- For the filling: 3 medium potatoes, boiled and roughly mashed
- 1/2 cup green peas, fresh or frozen
- 1 tbsp oil, 1 tsp cumin seeds, 1 tbsp ginger-chilli paste
- 1 tsp ground coriander, 1/2 tsp garam masala, 1/2 tsp dried mango powder, salt
- 2 tbsp chopped coriander
- Oil for deep frying
- Green and tamarind chutney, to serve
Step by step
Keep the dough firm. Soft dough makes a soft, oily samosa.
Make a firm dough
Rub the oil into the flour, carom seeds and salt until it holds together like damp sand when squeezed. Add the water gradually and knead into a stiff, smooth dough. Cover and rest for 30 minutes.
Cook the filling
Crackle the cumin in hot oil, add the ginger-chilli paste, then the peas, potatoes and spices. Mix well, cook for a couple of minutes, stir in the coriander and let it cool fully.
Roll and cut
Divide the dough into 4 balls and roll each into a thin oval about 20 cm long. Cut each across the middle into two half circles.
Fold and fill
Brush the straight edge with water, fold the half circle into a cone and press the seam shut. Fill it two-thirds full, brush the open edge with water and pinch it closed.
Fry slowly
Heat oil to about 150 C (300 F), lower the heat and fry the samosas in batches for 12 to 15 minutes, turning, until deep golden and blistered. Drain on paper.

Tips for a better result
The shell is what separates a good samosa from a soggy one.
- Add enough oil to the flour. The crumbly texture before adding water creates the blisters.
- Fry on low to medium heat so the shell cooks through and crisps slowly.
- Cool the filling completely before filling, or the steam softens the dough.
02
Mistakes to avoid
These are the most common problems.
- Frying in oil that is too hot, which browns the outside and leaves a raw, doughy shell.
- Overfilling, which makes the seam burst in the oil.
- Using soft dough, which absorbs oil and goes limp.
03
Shopping for it in Canada
Most things come from a regular supermarket, with two small exceptions.
- Carom seeds (ajwain): from Indian grocers. Skip them if you cannot find any.
- Dried mango powder (amchur): from Indian grocers. A squeeze of lemon juice stands in for the tang.
- Peas: frozen peas work well and are easier than fresh.
- Oil: any neutral oil for frying, such as canola.

Questions, answered.
How long does Samosa take to make?
About 1 hour 30 minutes from start to finish for 4 (8 samosas).
Can I make Samosa ahead of time?
The filled, uncooked samosas can be frozen on a tray, then fried from frozen on low heat. The filling can be made a day ahead.
Can I bake samosas instead of frying them?
Yes. Brush them with oil and bake at about 200 C (400 F) for 25 to 30 minutes. They will be lighter and less blistered than fried samosas.
What do I serve with Samosa?
Green and tamarind chutney, a cup of strong chai, or as samosa chaat with yogurt and onions.
