What you need
Quantities serve 2 (2 toasties). A sandwich press makes this easy, but a heavy pan works too.
- 4 slices bread, butter
- 100 g paneer, cut into small cubes
- 2 tbsp Schezwan sauce (jarred or homemade)
- 1/4 cup finely chopped onion and capsicum
- 1/2 cup grated mozzarella
- 1 tbsp chopped coriander
- Salt and pepper
Step by step
Marinate the paneer for a few minutes, so it takes up the sauce.
Marinate
Toss the paneer cubes in 1 tablespoon of the Schezwan sauce and leave for 10 minutes.
Cook the filling
Heat a spoonful of oil, stir-fry the onion and capsicum for 1 minute, add the paneer and cook for 2 minutes. Season with salt and pepper and cool slightly.
Butter the bread
Butter one side of each slice. Spread the remaining sauce on the other sides.
Fill
Spread the paneer mixture on two slices, add the cheese and coriander, and top with the other slices, buttered side out.
Toast
Grill in a sandwich press or a heavy pan over medium heat for 3 to 4 minutes on each side, pressing lightly, until golden and the cheese is melted.
Serve
Cut into triangles and serve at once.

Tips for a better result
The sauce brings heat, so balance it.
- Taste the Schezwan sauce first. Brands vary a lot in heat.
- Chop the vegetables small so the sandwich closes tightly.
- Use plenty of cheese. It cools the heat and holds the filling together.
02
Mistakes to avoid
Common problems:
- Too much sauce, which makes the bread soggy.
- Wet vegetables that release water in the toastie.
- Cooking on high heat, which burns the bread before the cheese melts.
03
Shopping for it in Canada
Almost everything is easy to find.
- Schezwan sauce: sold in jars at Indian and Asian grocers, and in many supermarkets.
- Paneer: from Indian grocers and many supermarkets.
- Bread: any sandwich bread, preferably a little thick.
- Cheese: mozzarella or a pizza blend.
