    Double fry

What you need

Quantities serve 3. The double fry is what gives crisp fries.

  • 4 large potatoes (about 800 g), cut into 1 cm sticks
  • Oil for deep frying
  • 1 tsp chilli flakes or chilli powder
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika
  • 1/2 tsp dried oregano
  • 1 tsp salt
  • 1 tsp lemon juice or a pinch of citric acid
  • Mayo or yogurt, for dipping

Step by step

Dry potatoes are crisp potatoes.

  1. Cut and rinse

Cut the potatoes into even sticks. Soak them in cold water for 20 minutes, then drain and dry thoroughly with a towel.

  2. First fry

Heat oil to 150 C (300 F). Fry the potatoes in batches for 5 to 6 minutes, until soft and pale. Drain.

  3. Rest

Let the fries cool for at least 10 minutes. You can freeze them at this stage.

  4. Second fry

Raise the oil to 185 C (365 F). Fry the fries again in batches for 2 to 3 minutes, until golden and crisp.

  5. Mix the seasoning

While the fries fry, combine the chilli, garlic powder, paprika, oregano and salt in a bowl.

  6. Toss and serve

Drain the hot fries, toss them with the seasoning and lemon juice, and serve immediately.

Tips for a better result

Starch, dryness and heat.

  • Soak the potatoes to remove surface starch, which makes the fries crisp.
  • Dry them well. Wet potatoes spit in the oil.
  • Season while hot, so the spice sticks.

02

Mistakes to avoid

Avoid:

  • Crowding the pan, which lowers the oil temperature.
  • Skipping the rest between fries.
  • Seasoning cold fries, which makes the spice fall off.

03

Shopping for it in Canada

Everything is a supermarket staple.

  • Potatoes: Russet are the best for fries.
  • Peri peri seasoning: sold ready-made in many supermarkets.
  • Chilli flakes and paprika: from the spice aisle.
  • Oil: canola, peanut or sunflower for frying.
