What you need
Quantities serve 4. Use whatever vegetables you have, but keep potato and tomato as the base.
- 3 medium potatoes, peeled and cubed
- 1 cup cauliflower florets
- 1/2 cup green peas
- 1 small carrot, chopped (optional) and 1/2 small beetroot for colour (optional)
- 3 tbsp butter, plus more for the buns
- 1 large onion, finely chopped, and 3 ripe tomatoes, chopped
- 1 tbsp ginger-garlic paste and 1 green chilli
- 2 tbsp pav bhaji masala, 1/2 tsp Kashmiri chilli powder, salt
- 8 soft pav buns or dinner rolls
- To serve: chopped raw onion, fresh coriander, lemon wedges
Step by step
You are cooking the vegetables soft and then mashing them on the pan, so a wide skillet works best.
Boil the vegetables
Boil the potatoes, cauliflower, peas, carrot and beetroot in salted water until completely soft. Drain, keeping a cup of the cooking water.
Cook the base
Melt 2 tablespoons of butter in a wide pan. Cook the onion until golden, add the ginger-garlic paste and green chilli, then the tomatoes. Cook until the tomatoes break down and the oil starts to separate.
Add the spices
Stir in the pav bhaji masala, chilli powder and salt, and cook for a minute so the spices bloom.
Mash it together
Add the vegetables and mash everything with a potato masher until mostly smooth. Add the cooking water a splash at a time and simmer for 10 minutes, until thick and glossy.
Finish with butter
Stir in the last tablespoon of butter and a squeeze of lemon. Taste for salt.
Toast the pav
Split the buns, melt butter in a pan and toast the cut sides until golden. Serve with the bhaji, onion, coriander and lemon.

Tips for a better result
Patience at the mashing stage is what gives the proper texture.
- Cook the vegetables until completely soft so they mash without lumps.
- Add the butter in two stages: some to cook the base, and a final knob to finish.
- Use a masher on the pan, not a blender, for the right rustic texture.
02
Mistakes to avoid
Watch for these.
- Adding too much water, which makes it soupy instead of thick.
- Not cooking the tomatoes down, which leaves a raw, sour taste.
- Using ground spices from an old jar, which makes the masala flat.
03
Shopping for it in Canada
Everything here is available, and the only specialty item is the spice blend.
- Pav bhaji masala: from Indian grocers and many supermarkets in the international aisle.
- Pav: soft dinner rolls or small brioche-style buns work fine.
- Kashmiri chilli powder: gives colour without too much heat. Regular paprika is a stand-in.
- Beetroot: a small piece adds the red colour traditional in Mumbai.

Or let us make it
Pav bhaji improves with a long simmer and a lot of butter, which is hard to do well in a small batch. Pav Bhaji is $13.99 CAD on our menu, at 200 Kennevale Dr Unit 104, Barrhaven, Ottawa, Tuesday to Sunday, 11am to 11pm, closed Mondays.
Questions, answered.
How long does Pav Bhaji take to make?
About 50 minutes from start to finish for 4.
Can I make Pav Bhaji ahead of time?
The bhaji keeps well for 2 days in the fridge and tastes even better reheated, with a splash of water and a knob of butter. Toast the pav fresh.
Can I make pav bhaji with less butter?
Yes, but the flavour and glossy texture will change. Butter carries the spices, so reduce it gradually rather than leaving it out.
What do I serve with Pav Bhaji?
A glass of lassi or a cold masala soda, and a few pickled onions or a green chilli on the side.
