What is inside
The heart of a dabeli is a mashed potato filling cooked with a special spice blend called dabeli masala, which mixes sweet and heat. The bun is split, spread with tamarind and green chutneys, stuffed, and rolled in sev and roasted peanuts.

Where it comes from
Dabeli is said to have been invented in Mandvi, in the Kutch region of Gujarat, and the dish is still sometimes called Kutchi dabeli. The word means pressed, which describes the way the filling is pushed into the bun.

What makes it different
Compared to vada pav, dabeli is sweeter and more textured. The pomegranate adds juicy bursts, the peanuts add crunch, and the filling has a gentle sweetness that vada pav lacks. The bun is often toasted on a griddle with butter.
