What you need
Quantities serve 3. Have everything chopped and measured before you light the stove, because the cooking takes only a few minutes.
- 200 g (7 oz) dried wheat noodles
- 1 tbsp oil for the noodles, plus 2 tbsp for the wok
- 4 garlic cloves, finely chopped
- 1 cup finely shredded cabbage
- 1/2 cup julienned carrot
- 1/2 cup thinly sliced capsicum
- 2 spring onions, whites and greens separated
- 1 tbsp soy sauce, 1 tbsp chilli sauce, 1 tsp vinegar
- 1/2 tsp black pepper and salt to taste
Step by step
Everything happens fast once the wok is hot.
Boil the noodles
Cook the noodles in salted boiling water until just tender, about 1 minute less than the pack says. Drain, rinse with cold water and toss with 1 tablespoon of oil so they do not stick.
Heat the wok
Heat the wok until it is very hot, add 2 tablespoons of oil and fry the garlic and spring onion whites for 15 seconds.
Stir-fry the vegetables
Add the cabbage, carrot and capsicum and toss on high heat for 1 to 2 minutes, until hot but still crunchy.
Add the noodles and sauces
Add the noodles, then the soy sauce, chilli sauce, vinegar, pepper and a pinch of salt. Toss for 1 to 2 minutes, lifting the noodles so they mix evenly.
Finish and serve
Scatter the spring onion greens, taste for salt and serve immediately.

Tips for a better result
Dry noodles and high heat are the whole secret.
- Rinse the cooked noodles in cold water and drain them well. Wet noodles steam instead of fry.
- Work in small batches. A crowded pan lowers the heat and gives soggy noodles.
- Add sauce around the edge of the pan so it sizzles before it hits the noodles.
02
Mistakes to avoid
Most failures trace back to these.
- Overcooking the noodles, which break up when tossed.
- Cooking the vegetables too long, so they lose their crunch.
- Adding too much soy sauce early, which makes the dish salty and dark.
03
Shopping for it in Canada
This is an easy shop from any supermarket.
- Noodles: dried chow mein or thin egg-free wheat noodles work. Check the label if you want a vegetarian, egg-free noodle.
- Chilli sauce: Sriracha or a Schezwan-style sauce from the international aisle.
- Soy sauce: use a regular or reduced-sodium one and adjust the salt.
- Wok: a large, heavy skillet works if you do not have a wok.
