    Grill or toast

What you need

Quantities serve 2 (2 sandwiches). A sandwich toaster or a heavy pan both work.

  • 4 slices soft bread and soft butter
  • 2 boiled potatoes, mashed
  • 1/2 tsp chilli powder, 1/2 tsp cumin powder, 1/2 tsp chaat masala, salt
  • 2 tbsp green chutney
  • 1 small tomato, thinly sliced
  • 1/2 cucumber, thinly sliced
  • 1/2 small onion, thinly sliced
  • Chaat masala for sprinkling

Step by step

Keep the vegetable slices thin so the sandwich closes and grills evenly.

  1. Season the potato

Mix the mashed potato with the chilli powder, cumin, chaat masala and salt.

  2. Butter the bread

Butter one side of each slice. On the other sides, spread green chutney.

  3. Layer

Spread the potato on two slices, then layer tomato, cucumber and onion over it. Sprinkle with chaat masala.

  4. Close

Top with the other slices, buttered side out, and press down gently.

  5. Grill

Toast in a sandwich maker or a heavy pan over medium heat for 3 to 4 minutes on each side, pressing lightly, until golden.

  6. Serve

Cut into triangles and serve with ketchup or extra chutney.

Tips for a better result

Dry layers keep it crisp.

  • Pat the tomato slices dry so they do not make the bread soggy.
  • Spread butter right to the edges for an even toast.
  • Grill on medium heat so the middle warms without burning the outside.

02

Mistakes to avoid

Common problems:

  • Too much filling, which squeezes out when pressed.
  • Wet vegetables that soften the bread.
  • High heat that burns the bread before it warms the potato.

03

Shopping for it in Canada

This is an easy one.

  • Bread: soft white or brown sandwich bread works best.
  • Green chutney: jars from Indian grocers, or blend coriander, mint, green chilli and lemon.
  • Chaat masala: from Indian grocers.
  • Sandwich maker: a heavy skillet pressed down with a plate is a fine substitute.
