The 4 layers of Pani Puri
Pani Puri is built from 4 parts. They are listed in the order you meet them, and the numbers match the diagram.
The puri shell
A small, round, deep-fried ball of semolina or wheat dough that puffs into a hollow, brittle shell. It is cracked open at the top just before filling.
The filling
Mashed potato, often mixed with boiled chickpeas or sprouted moong, seasoned with salt, cumin and chilli powder.
Sweet tamarind chutney
A dark, sticky sweet-and-sour spoonful that balances the heat of the water.
The pani
Chilled water blended with mint, coriander, green chilli, cumin, black salt and often tamarind. It is thin, sharp and cold, and it is the reason for the dish’s name.
01
What it is made of
Pani puri is only four parts, but each one has to be right: a crisp shell, a soft filling, a sweet chutney and a cold, spiced water. The water is the star, and every cook has their own balance of mint, chilli and tang.
- Semolina or wheat puri shells
- Mashed potato
- Chickpeas or sprouts
- Mint and coriander
- Green chilli
- Tamarind
- Black salt and cumin
02
How the layers work together
You get crunch, then soft, then a wave of cold, sharp, minty water, followed by a little sweetness. The shell is nearly flavourless on purpose, so it can carry the water. That is why the dish is eaten whole and immediately: the contrast between a crisp shell and cold water lasts only about a minute.
03
Where it comes from
Pani puri is a street food found across India under different names. It is called golgappa in much of North India, puchka in Kolkata and pani puri in Mumbai and the west. Where it began is disputed, and the stories about it are better treated as folklore than history.
04
Variations and other names
The shell and the water both change from place to place:
- Golgappa: usually a wheat shell with a sharper, spicier water.
- Puchka: a tamarind-forward water and a mashed potato filling with chickpeas.
- Sweet pani: a milder water with dates and tamarind, often served on the side.
- Dahi puri: the same shell filled with yogurt and chutneys instead of water.
05
How to eat it
Eat it right away and in one bite, so the shell is still crisp when the water arrives. If it is too large, crack the top, pour in the water and eat it in two bites. Start with the mild water if you are not sure about the spice.
