The 5 layers of Gobhi Paratha
Gobhi Paratha is built from 5 parts. They are listed in the order you meet them, and the numbers match the diagram.
The wheat dough
Soft whole wheat dough that is rolled thin, strong enough to hold a moist vegetable filling.
The salted cauliflower
Cauliflower grated fine, salted and left to release water, then squeezed dry so it does not soak the dough.
The seasoning
Green chilli, ginger, coriander, ajwain and dried mango powder, which give the filling a sharp, fragrant, slightly tangy edge.
The seal
The dough is closed over the filling and rolled flat again, spreading the cauliflower into a thin layer.
The butter
Ghee or butter on the hot griddle crisps the surface and keeps the inside tender.
01
What it is made of
Gobhi paratha is only as good as the filling is dry. Cauliflower holds a lot of water, so the work is in drawing it out, because wet filling is what splits the dough.
- Whole wheat flour (atta)
- Cauliflower
- Green chilli and ginger
- Carom seeds (ajwain)
- Dried mango powder
- Coriander
- Butter or ghee
02
How the layers work together
Fragrant and a little sharp, with the mild sweetness of cauliflower and a lift from ginger, chilli and carom. It is lighter and more herbal than aloo paratha, and the crisp, buttery crust balances the soft filling.
03
Where it comes from
Gobhi paratha is a North Indian winter breakfast, made when cauliflower is in season. It is a staple of Punjabi homes and roadside dhabas, usually eaten with butter, yogurt and a tangy pickle.
04
Variations and other names
Stuffed parathas follow the season:
- Mooli paratha: stuffed with grated radish, another winter favourite.
- Methi paratha: with fenugreek leaves mixed into the dough.
- Mixed vegetable paratha: with grated carrot, cabbage and peas.
- Gobhi kulcha: the filling in a soft leavened bread.
05
How to eat it
Eat it hot with a spoon of yogurt and a little pickle. The cool yogurt balances the ginger and chilli, and a cup of chai finishes the plate.
