What you need

Quantities serve 4 (4 burgers). Use floury potatoes and dry the mashed potato well, so the patties hold their shape.

  • 3 medium potatoes, boiled and mashed
  • 1/2 cup finely chopped mixed vegetables (carrot, peas, beans), steamed
  • 1/4 cup breadcrumbs, plus 1/2 cup for coating
  • 1 green chilli, 1 tbsp chopped coriander
  • 1/2 tsp cumin powder, 1/2 tsp chilli powder, 1/2 tsp garam masala, salt
  • 2 tbsp cornflour mixed with 4 tbsp water, for the coating
  • Oil for shallow frying
  • 4 burger buns, butter
  • Lettuce, sliced onion and tomato
  • Mayonnaise and chilli sauce

Step by step

Chill the patties before frying. It is the difference between crisp and crumbled.

  1. Make the patty mix

Combine the potato, vegetables, 1/4 cup breadcrumbs, chilli, coriander and spices. Mix well and taste for salt.

  2. Shape and chill

Form 4 patties slightly wider than the bun. Chill them for 20 minutes to firm up.

  3. Coat

Dip each patty into the cornflour slurry, then press into the breadcrumbs until coated on both sides.

  4. Fry

Heat 1 cm of oil in a pan over medium heat. Fry the patties 3 to 4 minutes per side, until deep golden and crisp. Drain on paper.

  5. Toast the buns

Split the buns, butter the cut sides and toast in a pan until golden.

  6. Assemble

Spread mayonnaise and chilli sauce on the bottom bun, add lettuce, the patty, onion and tomato, and close the burger. Serve hot.

Tips for a better result

The patty has to be firm and crisp.

  • Squeeze excess moisture out of the vegetables before mixing.
  • Chill the patties before coating. Cold patties hold together.
  • Double-coat in breadcrumbs for a thicker crust.

02

Mistakes to avoid

The usual mistakes:

  • A wet mixture, which makes soft patties that fall apart.
  • Frying on a heat that is too low, so the patties absorb oil.
  • Assembling the burger long before eating, which makes the bun soggy.

03

Shopping for it in Canada

Everything is a supermarket item.

  • Buns: any soft burger buns, or brioche buns for a richer burger.
  • Breadcrumbs: plain or panko. Panko gives a crunchier crust.
  • Chilli sauce: Sriracha, or any Indian-style chilli or Schezwan sauce.
  • Vegetables: frozen mixed vegetables, thawed and drained, save time.
