What you need

Quantities serve 2 (2 burgers). Make the noodles dry and well seasoned, so they stay inside the bun.

  • 2 burger buns, butter for toasting
  • 2 vegetable tikki patties (see our veg burger recipe, or ready-made)
  • 1 cup cooked hakka noodles, stir-fried with 1 tbsp soy sauce, 1 tsp chilli sauce and a little vinegar
  • 2 tbsp mayonnaise and 1 tbsp Schezwan or chilli sauce
  • Lettuce leaves and thin onion rings
  • Oil for frying

Step by step

The noodles should be dry and almost sticky, not wet.

  1. Prepare the noodles

Boil the noodles, drain well, and stir-fry on high heat with the soy sauce, chilli sauce and vinegar. Keep tossing until all the liquid has evaporated, then cool slightly.

  2. Crisp the patties

Fry or reheat the tikki patties until golden and crisp on both sides.

  3. Mix the sauce

Stir the mayonnaise and the hot sauce together in a small bowl.

  4. Toast the buns

Butter the cut sides of the buns and toast until golden.

  5. Build

Spread the sauce on both halves. On the bottom, layer lettuce, the patty, a mound of noodles and the onion rings.

  6. Close and serve

Add the top bun, press gently and serve hot.

Tips for a better result

Dry noodles and a firm patty hold the burger together.

  • Cook the noodles until very dry. Anything wet will leak through the bun.
  • Keep the portion of noodles modest, so the bun can close.
  • Eat it within a few minutes of assembling.

02

Mistakes to avoid

Common problems:

  • Wet noodles that soak the bun.
  • Piling on too many noodles, so the burger slides apart.
  • Building it ahead, so the bun goes soggy.

03

Shopping for it in Canada

Almost all of it comes from a supermarket.

  • Noodles: dried wheat noodles or chow mein noodles.
  • Patty: use our veg burger patty recipe or a ready-made vegetable patty from the freezer aisle.
  • Sauces: Sriracha and sweet chilli sauce work as a stand-in for Schezwan.
  • Buns: sturdy brioche or potato buns.
