What you need

Quantities serve 4 (about 24 momos). Shaping the momos takes patience. Ready-made wrappers can speed it up.

  • For the wrapper: 2 cups all-purpose flour, 1/2 tsp salt, about 1/2 cup water
  • For the filling: 2 cups finely chopped cabbage, 1 grated carrot, 1/2 cup finely chopped onion
  • 1 tbsp ginger-garlic paste, 1 tbsp soy sauce, 1/2 tsp black pepper, 1 tbsp oil, salt
  • For the peri-peri sauce: 2 tbsp peri-peri or hot chilli sauce, 1 tbsp butter or oil, 2 garlic cloves, 1 tsp lemon juice, a pinch of sugar, salt

Step by step

Keep the wrappers covered with a damp cloth while you work so they do not dry out.

  1. Make the dough

Knead the flour, salt and water into a smooth, firm dough. Cover and rest for 30 minutes.

  2. Prepare the filling

Salt the cabbage and carrot, leave for 5 minutes and squeeze out the water. Mix with the onion, ginger-garlic paste, soy sauce, pepper and oil.

  3. Roll the wrappers

Roll the dough thin and cut 8 cm circles. Roll the edges slightly thinner than the centre.

  4. Fill and pleat

Place a spoonful of filling in the centre of each circle, then pleat the edge into small folds and pinch the top closed.

  5. Steam

Arrange the momos on an oiled steamer rack, not touching, and steam over boiling water for 10 to 12 minutes, until the wrappers look translucent.

  6. Make the sauce and toss

Heat the butter, fry the garlic for 30 seconds, then add the peri-peri sauce, lemon, sugar and salt. Toss the hot momos in the sauce and serve at once.

Tips for a better result

The filling and the wrapper make the dish.

  • Squeeze the vegetables dry, or the filling releases water and makes the wrapper soggy.
  • Roll the wrapper edges thin and the centre slightly thicker for strength.
  • Do not crowd the steamer, because momos stick if they touch.

02

Mistakes to avoid

The usual mistakes:

  • Wet filling that makes the wrappers tear.
  • Thick wrappers that stay doughy when steamed.
  • Over-steaming, which makes the wrappers gummy.

03

Shopping for it in Canada

Most items are common.

  • Wrappers: dumpling or gyoza wrappers from the supermarket work in a pinch, though they are thinner.
  • Steamer: a bamboo steamer or a metal insert in a pot both work.
  • Peri-peri sauce: sold in many supermarkets. Any hot chilli sauce also works.
  • Soy sauce: regular or reduced-sodium.
