What you need
Quantities serve 2. Use a strong, granular black tea for the best colour and body.
- 1 cup water
- 1 cup whole milk
- 2 heaped tsp strong black tea (CTC or Assam)
- 1 inch fresh ginger, crushed
- 2 green cardamom pods, crushed
- 2 tsp sugar, to taste
Step by step
Simmer, do not rush. Slow cooking is what makes the tea kadak.
Boil the water with the spices
Bring the water, crushed ginger and cardamom to a boil in a small pot. Let it simmer for 2 minutes.
Add the tea
Add the tea leaves and sugar. Let it boil for 2 minutes, until the water is deep brown.
Pour in the milk
Add the milk and bring the pot to a rolling boil.
Simmer
Reduce the heat and simmer for 3 to 4 minutes, watching so it does not boil over, until the tea is dark amber and thick.
Strain and serve
Strain into cups and serve very hot.

Tips for a better result
Strength comes from tea and time.
- Use a little more tea than for a regular chai.
- Simmer on low after the milk goes in, so the tea does not turn bitter.
- Let the tea boil in water before adding milk, so the leaves release their flavour.
02
Mistakes to avoid
Common problems:
- Over-boiling the milk, which turns the tea bitter.
- Using weak tea bags, which cannot stand up to the milk.
- Adding too much ginger, which overwhelms the tea.
03
Shopping for it in Canada
Everything is easy to find.
- Tea: Assam or CTC tea from Indian grocers, or a strong breakfast tea.
- Ginger: fresh root from any supermarket.
- Cardamom: green pods from the spice aisle.
- Milk: whole milk for the creamiest cup.
