What you need
Quantities serve 4 (4 parathas). Both the dough and the filling can be made ahead.
- For the dough: 2 cups (250 g) whole wheat flour, 1/2 tsp salt, 1 tbsp oil, about 3/4 cup water
- For the filling: 3 medium potatoes, boiled and peeled
- 1 green chilli, finely chopped, and 2 tbsp chopped coriander
- 1/2 tsp cumin powder, 1/2 tsp chilli powder, 1/2 tsp dried mango powder, salt
- Extra flour for dusting
- Butter or ghee for cooking
- To serve: plain yogurt, butter and pickle
Step by step
Take your time rolling. A firm, even hand gives you a paratha that does not tear.
Knead the dough
Mix the flour, salt and oil, then add the water gradually and knead into a soft dough. Cover and rest for 20 minutes.
Make the filling
Mash the potatoes until smooth, and mix in the chilli, coriander, cumin, chilli powder, dried mango powder and salt. Taste and adjust. The mixture should be dry enough to shape.
Stuff
Divide the dough into 4 balls. Flatten one into a small circle, place a ball of filling in the centre, gather the edges over it and pinch to seal.
Roll gently
Dust with flour and roll the stuffed ball out into a circle about 18 cm wide, pressing lightly and evenly so the filling spreads without breaking through.
Cook on the griddle
Heat a griddle over medium heat. Cook the paratha for a minute on each side, then brush with butter or ghee and cook again, pressing lightly, until both sides have golden brown spots.
Serve hot
Add a little butter on top and serve at once with yogurt and pickle.

Tips for a better result
Small details keep the paratha from tearing.
- Let the potato cool and dry before using it. Wet filling tears the dough.
- Keep the filling about the size of a golf ball, and the dough ball only slightly bigger.
- Cook on medium heat so the inside is hot and the outside is crisp.
02
Mistakes to avoid
The usual problems:
- Overfilling, which makes the paratha burst when rolled.
- Rolling too hard, which pushes the filling through the dough.
- Too much flour for dusting, which burns on the griddle and tastes bitter.
03
Shopping for it in Canada
This is an easy one to shop for.
- Whole wheat flour: Indian grocers sell atta, which is finer. Regular whole wheat flour works but may need a little more water.
- Dried mango powder: from Indian grocers. Lemon juice is a rough stand-in.
- Ghee: sold in jars in many supermarkets and Indian stores.
- Griddle: a cast iron skillet or flat non-stick pan works well.

Questions, answered.
How long does Aloo Paratha take to make?
About 50 minutes from start to finish for 4 (4 parathas).
Can I make Aloo Paratha ahead of time?
The filling can be made a day ahead. You can also cook the parathas, cool them, and reheat on a griddle. They also freeze well.
What can I use instead of whole wheat flour?
Atta from an Indian grocer is best. Regular whole wheat flour works, and mixing it half and half with all-purpose flour makes the dough easier to roll.
What do I serve with Aloo Paratha?
Plain yogurt, a dab of butter, a spoonful of pickle and a cup of masala or kadak chai.
