Indian street food

Chole puri vs chole bhature.

Both are spiced chickpea curry with fried bread. The curry is identical; the difference is the bread.

  • Puri

    Small, whole wheat

  • Bhatura

    Large, refined flour

  • Curry

    The same

  • Feel

    Lighter vs richer

01

The bread

A puri is made from whole wheat dough, rolled thin and fried so it puffs into a small, crisp-edged balloon. A bhatura is made from refined flour dough, often fermented with yogurt, and fried into a larger, softer, chewier bread. It is bigger and more indulgent.

02

The curry

The chole is the same in both: chickpeas simmered with onion, tomato, ginger, garlic and a tangy spice blend. Amritsari versions are darker and tangier, sometimes cooked with tea leaves for colour.

03

How they eat

Puri is lighter and easier to eat as a regular breakfast. Bhature are a weekend or festival meal, rich enough that people often need a nap afterwards. Both are served with sliced raw onion, pickle and lemon.

04

Which to order

Order puri for a lighter plate and a balance of bread and curry. Order bhature if you want a bigger, richer, more indulgent meal. At Tapri Chai, we serve the puri version.
